Our Day Fried rice

It is in my opinion that Ghanaian fried rice is the best especially the one we use to buy at the check check joint. This fried rice recipe is exactly what it tasted like when I was a child. Enjoy!!

What you need

2 cups jasmine rice

1 cup diced spring onions

2 large carrots, grated

3 tablespoons soy sauce

2 eggs, beaten

1 tablespoon veg oil

water

Directions

In a pan over medium high heat, add rice, soy sauce and 2 cups of water. Add salt, taste and adjust. Know your rice. My rice needs about 2 - 2 1/2 cups of water to cook the way I like. Cook until fluffy. Store rice overnight or put inside fridge for at least 2+ hrs. 

In a large non stil pan, add oil. Allow to heat up the add the eggs. Stir to scramble eggs and fry until golden. Then add rice. Stir and allow to cook/heat up for 5 mins. Taste and adjust salt. Add spring onions and carrots then turn off heat. 

Serve with shito and good ole fried chicken. The shito recipe will be in my blog posts. For the fried chicken, blend 1 onion, a handful of pepper, garlic and ginger together. Pour over chicken drumsticks, add salt, 1 teaspoon ground cumin, 1 teaspoon ground coriander and 1 teaspoon turmeric, 1/2  tablespoon of rosemary  Steam over medium low heat for 7 mins. Fry in hot oil and serve with fried rice.
