Boozy Garlic & Shrimp Stir Fry
I love a good noodle stir fry and I love to make my own noodles too so I almost always have fresh noodles in my freezer. It just happens that I had tequila this time round so I thought why not add it and make boozy noodles and dare I say it turned out so well. If you decide to make this recipe, you can use my fresh homemade ramen noodles or use any noodles of your choice. It'll still be great either way. Enjoy and don't forget to check my insta for short how to videos. If you don't take alcohol, you can omit it completely.
Recipe. 4 servings
16 medium sized fresh shrimps, peeled and deveined with tails on
725g my homemade ramen noodles or any noodle of your choice
5 chilis, finely diced
1/3 cup diced spring onions
2 tablespoons sesame oil + 2 tablespoons vegetable oil
1/4 cup fresh parsley*, chopped
1/4 cup fresh basil*, chopped
10 garlic cloves thinly sliced
1 teaspoon fav spice mix
1 teaspoon freshly grated ginger
1 medium onion, sliced
Extra veg oil for frying noodles
For the Marinade
1/3 cup tequila*
2 + 1/4 teaspoon brown sugar
1/4 cup soy sauce
2 teaspoons cornstarch/flour
Use any fresh herbs of your choice
You can add more tequila, it won’t affect the taste.
Directions
To cook noodles, bring a large amount of salted water to a boil( using a lot of water ensures that all the excess flour on the dough will not cause the dough to have a gummy or slimy exterior). Cook noodles, stirring occasionally to avoid sticking. Cook for 1 mins 30 secs to 4 mins depending on the thickness or until cooked if you're using my homemade ramen noodles, if not, cook according to the instructions on the packet (discard the seasoning). Drain immediately then rinse in cold water then drain and dry with a kitchen towel. If you’re using a noodle basket, stir occasionally to avoid sticking, then drain and rinse in cold running water and dry..
Combine all the ingredients to form a marinade and set aside.
Heat a non stick pan/wok over medium high heat and add 2 tablespoons of veg oil. Allow oil to heat up and tilt around to spread evenly. Spread a thin layer of the cooked noodles in the wok. Fry until the side in the pan turns golden then flip (you can use a plate to flip it easily) and add more oil to crisp up the other side (you just want The noodles to crisp up lightly). Repeat until all the noodle is fried and set aside
Heat 2 tablespoons sesame oil + 2 tablespoons veg oil over medium heat until hot. Add shrimp, sliced garlic, diced chili, onion, ginger and spice mix. Cook until shrimp turns orange then add salt. Taste and adjust salt. Add the cooked noodles, stir and add the marinade. Lift it off the heat and toss the noodles to completely coat with marinade. Turn heat to low and the chopped basil, spring onions and parsley and turn heat off, this process should take less than 30 secs, we don't want to cook out the alcohol.
