Sweet & Spicy Chili Sauce

I have been making this sauce for years but for whatever reason never thought to write the recipe down just until recently when I had a baking session and made a tuna mix fora tuna bread with this recipe. I’d taken for granted how good it really was but when I received so many requests for the recipe I knew I had to write it down when next I made it. I used fresh chilies in this recipe but I have also made it with dried chilies and it tasted equally good. My note will be that though it would taste the same, it would not be as vibrant as the one with fresh chilies. If you can't handle so much heat, remove the seeds from some of the chilies 🌶 and leave the rest as it is to balance flavor. This chili sauce works with everything, use it together with mayonnaise to make a spicy mayonnaise, use on sandwiches, use as a marinade or as a dipping sauce. You literally can't go wrong with this.

Recipe

what you need

150g ( 2 cups) fresh/dried chili peppers (remove some of the seeds if you don't want it to spicy)

1 bulb of garlic

1 small onion

3/4 cup white wine vinegar/rice vinegar*

1 1/4 cups water

1 cup sugar

Salt

Slurry

1/4 cup soft/corn flour 

1/4 cup water

  • If you use dried chilies, wash and then rehydrate in the same amount of water required for the recipe. Use the chili water then to replace the water.

  • You can use any white vinegar of your choice.

Directions

Process chili, onion and garlic in a food processor or mini chopper until the chili is broken down. If you don't have a food processor of chopper, throw all the ingredients (minus the flour and sugar) into a blender and blend until chili is broken down. Pour in a pan and add the sugar. Place over medium heat and bring to gentle boil. Boil for 5 minutes. Meanwhile make the slurry.

To make the slurry, combine the flour and water. Add to the chili sauce and stir quickly so it doesn’t clump up.  Turn heat down and continue cooking for 7 minutes. It will continue to thicken up as it cools down. Allow the sweet & spicy chili sauce to cool down a bit then pour into a jar. You can also pass through a sieve to get rid of all the seeds. Store in the refrigerator. Use in marinades, dips, for grilling, as a salad dressing. I literally use it in everything.
