Beans Stew ( Red Red)

Recipe

What you need

2 cups black eyed beans, cooked and drained

1/3 cup good palm/veg oil

1 Momoni ( substitute for 1 tablespoon fish sauce)

1 small onion, sliced

1 medium onion

5 large tomatoes

1 teaspoon curry powder 

A handfuls of pepper (adjust)

1 tablespoon tomato paste

1 small smoked mackerel/fish, flesh and bones removed and torn into chunks

Salt

1 tablespoon fish powder

Directions

Blend the onion, tomato, garlic and pepper. Set aside for later. Pour palm oil in a pan and put over medium high heat. Allow oil to heat up and add the momoni and sliced onions. Fry until onion turns golden then add the tomato paste. Fry in oil, stirring occasionally for 7 mins. Add the blended mixture and cook until it thickens. Add curry powder. Add the smoked mackerel and fish powder. Taste and adjust salt. Add the cooked beans (save excess cooking liquid). Stir, taste and adjust salt. If too thick for you, thin stew with the saved excess water from the beans.

Alternatively you can use an already made stew base and add the mackerel and fish powder. It'll still be delicious.

Serve with fried plantain or steamed rice.
