Quick Noodles

 I don't know if I'm the only one but I seem to always have pork or chicken hidden somewhere in my freezer almost every time when I don't really want to cook anything complicated. Noodles is my go to every time the laziness sets in because it's quite easy to make and you can do anything you want and it won't take away from the flavor. Recipe

What you need

1 chicken breast, cut into chunks

3 small noodle packs

2 eggs (optional)

1  teaspoon teriyaki sauce (optional)

1 teaspoon oyster/fish sauce

1 teaspoon soy sauce

1 medium onion, diced

1 teaspoon diced garlic

1 tablespoon veg oil

Favorite veggies ( I used bell pepper for mine)

3 large chili peppers, diced (adjust)

1/2 teaspoon each of  ground aniseed and ground cumin.

1/2 teaspoon black pepper (optional)

Salt

In a bowl, combine the chicken chunks, ground spices, salt and allow to marinade for about 10-15 mins. Cook noodles 30 secs less than the instructions on the pack, drain and set aside.

Put a non stick pan over medium high heat. Add oil and allow to heat up. Add chicken chunks and fry for about 5 mins depending on the size. Add diced garlic and onion. Stir and allow to fry for a min. Push to one side of the pan and add eggs. Stir together and add the diced chili. Fry for 2 mins.

Add your favorite veggies. Then add the oyster, teriyaki and soy sauce. Stir to combine then add the cooked noodles. Stir everything together and cook for an additional 1 min. This recipe can be adjusted for whatever meat you choose. It works very well with mushrooms too.
