My 7 Spice Blend

I’ve already shared the recipe for my all purpose seasoning that can be used for everything. This seasoning is a bit different and quite potent so just a little goes a long way. I have some of my favorite Ghanaian spices in here and a couple of other ones. This mix works so beautifully with beef and chicken. It's dark and earthy and so fragrant. It also works pretty beautifully with plantain. You really can't go wrong with this mix but like everything else, moderation is key. Too much and it will leave a bitter aftertaste that is not pleasant at all and I speak from experience. Start with a teaspoon and build it up from there.

Recipe

what you need

  • 2 tablespoons star anise

  • 5 calabash nutmeg 

  • 1 1/2 tablespoons cloves 

  • 7 grains of selim 

  • 3 tablespoons fenugreek 

  • 3 tablespoons coriander seeds

  • 2 tablespoons fennel seeds

Directions

Toast all the spices over low heat until fragrant. Allow it to cool down and then blend into a smooth powder. Store in an airtight container. It can last for up to a month on the shelf before it starts losing some of its flavour.

Best with beef, goat, and pork. A little goes a long way.
