Akosua's Okro stew
This okra stew is my childhood right here. My mom used to make this at least twice a month and it was a hit always. This is actually her recipe and it's still as delightful as it was 20 years ago.
Recipe
What you need
4 chunks of fresh fish, cleaned
1/2 kg chicken drumsticks
1 tablespoon fish /shrimp powder
15 large Okra diced
5 large fresh tomatoes
3 large onions blended
Pepper, (as much as you want)
1 small ginger
5 garlic cloves
1/3 cup palm oil
1 small stinky fish (optional)
Salt
1 teaspoon chicken seasoning
Directions.
Cook diced okra for 10 mins in 1/3 cup of water and set aside. Adjust water quantity as you see fit. Do not cover when cooking. Blend 2 onions, pepper, garlic and the ginger and divide into 2 parts. Blend the tomatoes. Slice the onion left.
Put chicken in a pot over medium high heat and add the one part of the blended. Add salt, 1 cup of water. Cook for 20 mins or until its almost cooked through. Save stock
In a hot pot, add palm oil, stinky fish and sliced onions. Fry until onion begins to turn golden then add the cooked chicken. Fry for 5 mins stirring regularly. Add the rest of the blended ingredients. Cook for 10 mins. Add the saved stock. Add the fish chunks and cook for 7 mins then remove and set aside. Add the fish/shrimp powder. Add the chicken seasoning and taste and adjust salt. Cook until stock thickens to the desired consistency you want. Add a little water if it's too thick.
Add cooked okra and stir gently to mix with the other ingredients. Then add cooked fish. Taste and adjust salt if needed. Simmer gently for 5 mins then turn off heat.
Don't COVER until it cools down.
