Recipe

What you need

1 cup plain flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/3 cup of water

4 tablespoon  unsalted butter, melted

3 tablespoons olive oil

Directions

Combine the dry ingredients. Make a well in the center and add the water. Mix until a course  dough is formed. Knead dough until it becomes elastic, about 4 mins. Remove dough from bowl, oil bowl, then put dough back in and cover with a kitchen napkin and allow to rest for 30 mins.

Divide dough into 4 parts and shape into balls then all to rest for 15 mins. On a clean work surface or in my case a baking tray, flatten dough with your palm. Spread with your fingers, flip dough to form a semi circle. Flatten with your fingers and flip again then flatten  with your fingers or palm. Lift dough and stretch with your fingers. Dough shouldn't be too thick.

Combine olive oil and melted butter. Put a skillet/non stick pan over medium high heat. When skillet is hot, brush a generous amount of the butter olive oil mix in the skillet (brush enough of the bitter olive oil mix until you fear that your cholesterol level will rise). Allow it heat up and add stretched flattened dough. With the same brush without dipping it inside the butter olive oil mix, brush the  top of the dough in the skillet. Cook until the side in the skillet turns golden then flip over and cook the other side.

Keep warm until ready to serve.
