'Crepe Walk'

We eat a lot of pancake at home but then I remembered recently that I have never made crepes. I just knew in theory that it's thinner than pancakes and contains no leavening agent. I’m glad to say that this recipe turned out just the way I hoped, or maybe I was just too hungry, you be the judge. This crepe was served with mascarpone whipped cream cream and Nutella (any chocolate hazelnut spread will do). Though substitutions might change the flavor profile, mascarpone cream can be replaced with whipped cream.. The crepe isn't sweet on its own but the add-ons make up for that. You can add fresh fruits if you're into that kind of thing. Also Happy Independence Day to all Ghanaians especially my subscribers. ❤️

Recipe. Makes 6 crepes

what you need

Crepe

3/4 cup plain flour

3/4 cup milk

3 eggs

1/4 cup white granulated sugar

1/2 tablespoon vanilla extract/essence

pinch of salt

2 tablespoon browned butter

Vegetable oil for frying

Serve with

1) Mascarpone whipped cream

1 cup heavy whipping cream

1 1/2 cups mascarpone

1 teaspoon vanilla essence

2 tablespoon confectioners sugar

2) Nutella

Directions

To make brown butter, melt butter in a skillet over medium heat until it becomes brown and smells nutty. Combine all the ingredients for the crepe. The mixture will be quite thin. Allow it to rest for 20 mins. While the mixture rests, start working on your mascarpone whipped cream.

For the mascarpone whipped cream, whip the heavy whipping cream, icing sugar and vanilla essence until soft peaks form. Then add the mascarpone cream and whip until it peaks. It'll take about a minute. You can do it manually if you don't have a mixer, use a whisk. Pour into a pastry bag and rest it the fridge until you're ready to use it.

Put a crepe pan over medium heat and allow to heat up, you can also use a non stick skillet if you don't have a crepe pan. Add a 1/4 teaspoon of oil to hot pan and spread it by tilting pan around in a circular manner (wipe any excess off with a kitchen towel). Scoop 1/4 of the crepe mixture into the pan and spread it by tilting the pan around so it spreads evenly. Allow to fry for 30-45 secs then gently flip over using a spatula and fry the other side for 30 secs or until cooked. Repeat process until pancake batter is finished.

Allow crepe to cool down. Cream will melt if crepes are too hot. Fill crepes with mascarpone cream, then roll into a sausage like shape, then spread Nutella over it. if you're adding fresh fruits, add it with the cream before rolling it on itself. Serve immediately.

*if you decide to eat crepes at a later time, do not fill it with the cream. If you do it'll become soggy.
